At Gharnu Athanu, freshly harvested Garmar roots are carefully cleaned, sliced, and soaked in Mango Brine (Aam nu Pani) — the naturally sour water released during raw mango pickle preparation. Over time, the roots absorb the tangy mango flavour while retaining their signature crunch.
The result is a refreshing, naturally sour, crunchy pickle that represents a forgotten part of Gujarat's culinary heritage.
