Traditional Gujarati Karela Pickle
Gharnu Athanu Karela Pickle is a traditional Gujarati bitter gourd pickle made from salt-cured, naturally dried karela slices.
After washing and slicing the karela, we mix the slices with salt and allow them to rest so they naturally release a significant amount of moisture. The slices are then spread on large cotton cloths and dried naturally until excess surface moisture is reduced.
Once the karela slices are dried enough, we add achar masala, variyali (fennel), methi (fenugreek), ajwain, jeera (cumin), black pepper, salt and oil.
This traditional salt-curing and natural-drying process helps reduce excess moisture, mellows the natural bitterness of karela and gives the pickle its characteristic texture, flavour and better keeping quality.
The result is a bold, savoury, spicy and pleasantly bitter Gujarati pickle made for people who enjoy authentic traditional flavours.
